Executive Chef Alex Gutierrez leads the culinary team alongside Chef de Cuisine Jeramie Smith. Dawson's Bar opens earlier than the main dining room and runs its own "Capital Hour" on Tuesday through Thursday afternoons, offering a tighter menu of snacks and cocktails at accessible prices.
