Double Cut Steak House came together through an unlikely connection: Kalahari Resorts & Conventions CEO Todd Nelson crossed paths with Phil Roberts and Pete Mihajlov, founders of Twin Cities' Parasole Restaurant Holdings — a company that has been creating distinctive restaurants since 1977. A third partner, Kevin Kuester, rounds out the Parasole team. The collaboration felt immediate. "Working with Kalahari Resorts was the most natural thing in the world," Roberts has said. "When he told me what he needed, I got it instantly. When I came back to him with our idea, he got it instantly." That shared instinct shows in the result: a fine dining steakhouse that sits inside Kalahari's Round Rock resort yet holds its own as a destination in its own right.

The Menu: Classic Without Being Predictable

The kitchen's philosophy is straightforward — depart from the classic steakhouse format without alienating traditionalists. The menu moves from double-cut steaks and chops through fresh seafood, including lobster tail, and now extends to a thoughtfully curated sushi program. Signature rolls like the Double Cut Roll (shrimp tempura, asparagus, avocado, filet mignon, eel sauce) and the Godfather Roll (poached lobster, tuna, yellowtail, saffron aioli) reflect the same appetite for quality that runs through the main dining room. Platters, poke bowls, and classic rolls round out a sushi menu designed to complement rather than compete with the steakhouse's core identity.
