The raw bar is the anchor. Oysters arrive daily, and the menu builds outward from there — shrimp cocktail with marie rose sauce, a Caviar Slider on a house-made sweet potato bun with fried oyster and citrus crème fraîche, and a Fancy Tower stacking twelve oysters, shrimp, oyster shooters, two ceviches, and hamachi crudo. The ceviche section shows real range. The Ceviche Jipijapa pairs yellowfin tuna with peanut leche de tigre, avocado, aji verde, and green plantain.
