A Tradition Rooted in Southern Brazil

Fogo de Chão traces its origins to the Serra Gaúcha, the mountainous farm country of Rio Grande do Sul in southern Brazil. The founding brothers grew up in this churrasco-grilling tradition, left their rural home for formal churrasqueiro training in Rio and São Paulo, and built their first restaurant — a wood-structure in the countryside of Porto Alegre — out of an obsessive dedication to quality. Word spread quickly among politicians, businessmen, and celebrities who traveled from across Brazil to experience it. That reputation eventually carried the concept to the United States, debuting in Dallas before expanding to dozens of cities. Providence, at 148 Providence Place, is one of those chapters in a story that has been burning since 1979.

The Churrasco Experience

The heart of the meal is churrasco — the Brazilian art of fire-roasting meat on long skewers, carved tableside by trained gaucho chefs. Signature cuts include Picanha (the prime part of the top sirloin), Fraldinha (bottom sirloin), and more indulgent options like Wagyu New York Strip and Beef Ancho Bone-in Ribeye. Alongside the parade of cuts, a freshly curated Market Table offers seasonal accompaniments, salads, and vibrant sides that balance the richness of the grill.

Bar Fogo rounds out the experience with Brazilian-inspired small plates and cocktails — among them the Caipirinha, Brazil's national drink — in a setting designed for both casual evenings and larger celebrations.

The wine program at Fogo de Chão Providence earned a Wine Spectator Award of Excellence in 2024, a recognition that reflects the care taken in pairing South American and international bottles with fire-roasted cuts. The restaurant's own Founders Tribute Wine Collection offers a curated range — from the Jorjão Reserva Malbec from Mendoza, which pairs well with Picanha, to The Sonhadores Cabernet Sauvignon from California's Alexander Valley, a natural match for Filet Mignon or Lamb Chops. Occasional chef-curated wine dinners, such as a multi-course pairing featuring 100-point vintages from VIK Winery, bring the program to life in a more immersive format.
