The story
At the back of the Farm at South Mountain in Phoenix, Quiessence at the Farm occupies the property's original farmhouse — a setting that is as much a part of the meal as anything on the plate. The Soil & Seed Garden sits just outside, and the ingredients harvested there hours before service — vegetables, edible flowers, herbs, eggs from the on-site chicken coop, and fruit from a grove of more than 60 trees — define every dish that arrives at the table.
Executive Chef and co-owner Dustin Christofolo trained at the Italian Culinary Academy in New York City, refined his craft at La Scuola Internazionale di Cucina Italiana in Parma, Italy, and completed the Wine Immersion Program at the Culinary Institute of America in Napa Valley. Those foundations show in the menu's character: specialty handcrafted pastas, house-cured meats, artisan bread from a Le Panyol wood-fired oven, and a layering of flavors that is unmistakably rooted in Arizona's terroir.
Each week's tasting menu changes with the harvest. Chef Dustin oversees every row of the Soil & Seed Garden himself and works closely with local farmers and purveyors to fill whatever the season doesn't yet provide. Desserts draw on fruit from the farm's own trees. It is farm-to-table American cuisine taken at its most literal.
His commitment to the craft has earned notable recognition: an invitation to cook at the James Beard House in spring 2016, a return appearance at the James Beard Foundation Taste America: Phoenix event in 2017, a 4.5-star review from the Arizona Republic, an AAA Four Diamond Award, and a Wine Spectator Award of Excellence for the wine program he personally built to complement his menus.
Dinner at Quiessence unfolds across spaces that reward attention — a garden where stars are visible overhead, a Brick Oven Table warmed by fire, and an interior that feels refined without feeling stiff. The craft cocktail list takes the same garden-to-table approach as the kitchen, while the wine list spans domestic, international reserve, and Arizona labels. Private dining and corporate events are a natural fit here; the setting does considerable work on its own.
