It is Executive Chef Partner Greg Vernick's take on the American oyster bar — one where a deep respect for provenance meets a genuine curiosity about global flavor.
The kitchen's commitment to quality is stated plainly and lived out on every plate. Whether the product is stream-caught, farmed, wild-caught, or preserved tinned fish, the team sources the very best available and handles it accordingly. That discipline extends to a seasonal, sustainable approach across both small and large plate formats, with the goal of bringing something new to the familiar hallmarks of oyster bar cooking.
The raw bar anchors the experience — a daily selection of east coast oysters served with house accompaniments, alongside crudo preparations that speak to the kitchen's global reach: king salmon with avocado, mango, serrano, and cilantro; scallop crudo with buttermilk, rainier cherry, and shiso; amberjack tiradito with aji amarillo, cucumber, and pickled jalapeño.
Small plates move from ramón peña sardines on sourdough to blackened shrimp in creole broth with crispy grits and green tomato relish, or ricotta cavatelli with Maine lobster fra diavolo. Large plates show similar range — whole roasted branzino with gochujang glaze and kimchi lettuce cups, jerk roasted cod in coconut broth with green papaya escovitch, sea scallops à la plancha with beurre blanc, English peas, and shiitake.
