Inside Mandalay Bay Resort and Casino on the Las Vegas Strip, Stripsteak is Chef Michael Mina's take on the modern American steakhouse — one that trades on precision and personality rather than convention.
The dining room draws its design cues from the Mojave desert, creating an atmosphere that feels upscale without being stiff. It works equally well for a quiet dinner for two or a full private event, and the dedicated private dining program reflects how seriously the kitchen takes both occasions.
The menu is broader than a standard steakhouse, and that breadth is part of the point. The wood-burning grill anchors everything — prime domestic cuts like the 20 oz. Cowboy Ribeye and the 36 oz. Porterhouse for two share the menu with Japanese A5 Wagyu tenderloin and ribeye, as well as an American Wagyu Rib Cap that the kitchen lists as the chef's favorite cut. All steaks finish with a signature red wine-shallot butter.
Beyond beef, the kitchen moves confidently into seafood and composed dishes: Miso-Glazed Sea Bass with ginger dashi, Maine Lobster Toast with serrano chili and avocado purée, and a Raw Bar featuring Hamachi Nori Tacos with soy-cured ikura and wasabi tobiko. Caviar service — Petrossian Imperial Golden and Keluga — arrives with cast iron blinis and potato cakes.
The tasting menu distills the kitchen's range into a single progression, currently offered at $150 per person and optionally paired with Chef Mina's My Egypt cookbook. Sides like Black Truffle Mac N Cheese and Spicy Pork Belly Fried Rice with duck fat carrots signal that this is a steakhouse comfortable operating well outside the expected.
Wine Spectator recognized Stripsteak with its Best of Award of Excellence, and the list lives up to that distinction. By-the-glass pours span a custom Blanc de Blancs produced in partnership with the restaurant — Michel Gonet 'Les Hautes Mottes' Cuvée Mina — through Napa Chardonnays, Italian Pinot Grigio, and a full cellar list available on request.
