The story
Wally's Desert Turtle has been the standard-bearer for fine dining in the Greater Palm Springs area for over forty-five years. The story begins with Wally Botello, the entrepreneur behind the celebrated fine-dining chain "The Velvet Turtle," who chose Rancho Mirage as the setting for what he envisioned as his final masterpiece — a restaurant that would carry his own name and honor his life's work in hospitality.
To bring that vision to life, Botello enlisted designer Steven Chase, whose interiors regularly appeared in the pages of Architectural Digest. Chase created a dining room that blends contemporary and antique furnishings with artwork sourced from around the globe — much of it still in place today, a quiet testament to design that doesn't chase trends.
In the kitchen, classically trained French chef Jean-Louis Jalouneix set the culinary tone from the start. His menu gave the restaurant its identity, and several of his creations — Dover Sole, mushroom soup, and the celebrated soufflés — became Wally's Classics that guests still return for season after season. The cooking at Wally's sits at the intersection of French technique and Californian sensibility: precise, ingredient-driven, and deeply satisfying without being stiff.
That commitment to the wine experience has earned Wally's Desert Turtle the Wine Spectator Award of Excellence in 2025, recognition that reflects a wine list carefully matched to the kitchen's French-Californian register.
After Wally's passing in 1985, his son Michael Botello took over and quietly shaped the restaurant into one of the valley's most enduring institutions. Over the decades, Wally's has hosted Bob and Dolores Hope, Frank Sinatra, President Gerald R. and Mrs. Betty Ford, Benjamin Netanyahu, and Tom Hanks — a guest list that speaks to the restaurant's standing without needing elaboration.
Today, Michael's daughter Madalyn Botello leads the house, carrying the third generation of the family into a dining room that balances deep tradition with a fresh welcome for new guests.
The bar program brings its own character to the experience, mixing classics and original cocktails using top-shelf spirits and organic ingredients, with weekly live music adding warmth to the room. Private dining, corporate events, catering, and weddings round out what Wally's offers — making it as suited to an intimate anniversary dinner as to a landmark celebration.
