From Houston Butcher Shop to Oak Brook Table

Perry's Steakhouse & Grille carries a story that starts long before the white tablecloths. In 1979, Bob Perry opened a modest meat market in Houston — Perry's Butcher Shop and Deli — that quickly became a neighborhood fixture. By 1986, his son Chris Perry persuaded him to add dining tables, and the response from loyal customers made the next step inevitable. In 1993, Chris opened Perry's Steakhouse & Grille, combining the family's butcher-shop precision with a full dining experience. The Oak Brook location, situated at 5 Oakbrook Center, represents the brand's deep roots in the Chicago area, which became Perry's first market outside Texas when it expanded to Illinois in 2013.

What Rare and Well Done® Means in Practice

The phrase "Rare and Well Done®" is Perry's shorthand for a particular standard: nothing improvised, nothing generic. Butchers hand-select the beef before chefs apply a signature spice blend; the result is Prime USDA-aged steaks with the kind of marbling that makes the difference immediately apparent on the plate. Additions like Oscar Style with blue lump crab and Béarnaise, a coffee crust, or a Truffle Merlot demi-glace let guests tailor each cut without straying from the steakhouse format.

The wine program reflects the same attention — the Oak Brook location holds a Wine Spectator Award of Excellence, recognition that speaks to the depth and coherence of the cellar rather than its size alone.

The Pork Chop That Defines the Menu

Perry's Famous Pork Chop is the detail that surprises first-time visitors to this steakhouse. Seven fingers high, the chop is rubbed with a secret seasoning blend, cured, then slow-roasted on a pecan-wood rotisserie for up to six hours. It arrives at the table topped with Perry's signature herb-garlic butter and is carved tableside — a moment that has become as much a part of the experience as the cut itself. The recipe has been refined over more than four decades and is now considered one of the defining dishes of the brand nationally.

The Room and the Occasion

Bar 79® — named for the year the Perry family first opened their doors — offers a more relaxed entry point, with bar bites, cocktails, and a Social Hour running Sunday through Friday. For larger gatherings, private dining rooms accommodate groups and special occasions with dedicated menus and the same service standard as the main floor. The kitchen also accommodates celebratory touches: tableside carvings, anniversary menus, and complimentary desserts for birthdays, among others. It is the kind of steakhouse that works equally well for a business dinner and a milestone celebration.
