The story
Cosimo's on Union traces its identity back to a single, enduring idea: that bringing people together around a well-made meal is one of life's most worthwhile traditions. Founder Cosimo DiBrizzi grew up in Salerno, Italy, and carried those traditional recipes with him when he built what would become a beloved multi-location Italian restaurant group in the Hudson Valley. The Newburgh location on Route 300 carries that founding spirit forward.
Over more than 35 years, Cosimo's has worked closely with family farms throughout the Hudson Valley — a farm-to-table commitment that predates the trend. As the restaurant puts it, they've been sourcing locally since they opened their first restaurant. Today, Executive Chef Matt Sherry takes those traditional family recipes and refreshes them with the finest seasonal produce the region has to offer.
The kitchen's philosophy is captured in a phrase the team uses themselves: traditions refreshed. Handcrafted mozzarella and house-made sauces anchor the Italian cooking, while the signature wood-fired brick oven turns out pizzas and flatbreads built on semolina crusts. The range runs from a classic Napoletana pizza to a prosciutto and fig flatbread. Pasta, meat, and fish dishes follow the same logic — traditional foundations elevated by ingredient quality.
The wine program matches the ambition of the kitchen. Owner Nick Citera has built a list that earned Cosimo's a Wine Spectator Award of Excellence, with more than 20 wines available by the glass across all locations — sparkling, white, red, and rosé — alongside an award-recognized bottle selection.
Cosimo's on Union serves lunch and dinner through the week, with the same attention to detail whether a table is ordered for two or a private event is booked for fifty. The restaurant offers on- and off-premise catering, private rooms, and trays to go — making it as well suited to a board meeting as to a family Sunday dinner.
