The story

Crafted with passion, served with love

The Story Behind the Name

The name says everything, if you know the word. Saudade — pronounced saw-DA-jee in Brazilian Portuguese — has no direct English translation. It describes a deep, nostalgic longing for something absent, a feeling so specific it required its own word. The team behind CS Brazilian Steakhouse chose it deliberately: the idea is that after a meal here, guests leave already aching to return.

That aspiration is rooted in a genuine tradition. In Rio Grande do Sul, Brazil's southernmost state, Gaucho cowboys once skewered large cuts of meat and slow-grilled them over open-flame pits on the open pampas. CS Brazilian Steakhouse carries that churrasco tradition forward in Newark, Delaware, with Gaucho chefs roasting the finest cuts and carving them tableside, directly from the skewer.

What the Experience Looks Like

The full dinner experience is all-inclusive in the Brazilian rodízio style: unlimited tableside meat service, a gourmet salad bar with fresh vegetables, hot side dishes, and the restaurant's famous pão de queijo — Brazilian cheese bread. The gallery hints at what rounds out the table: farofa, feijoada, rice and beans, and desserts including triple chocolate mousse cake and caramel cheesecake.

The wine program earned a Wine Spectator Award of Excellence, a recognition that reflects the depth and curation of a 16-page wine list — serious enough to complement the bold, fire-driven flavors of Brazilian cuisine without overshadowing the meat.

Private dining rooms are available for larger groups, making CS Brazilian Steakhouse a well-suited venue for private parties and special occasions alongside its regular dinner service.

A Meal Worth Longing For

There's something unhurried about the rodízio format — it's a marathon, not a sprint, as the restaurant itself puts it. Gaucho chefs move through the dining room continuously, and the pace is set by the guest. That rhythm, combined with a wine list recognized at the national level and a setting that takes its Brazilian roots seriously, gives CS Brazilian Steakhouse a character that stands apart from the standard steakhouse experience in the region.
