On East 77th Street, just off Madison Avenue, The Mark Restaurant by Jean-Georges occupies the ground floor of one of the Upper East Side's most storied hotels. The room is comfortable yet elegant, anchored by a striking copper and glass wine wall that displays a carefully chosen collection of boutique and food-friendly bottles from around the world. When the weather allows, patio seating extends the experience onto the street. The wine program earned a Wine Spectator Best of Award of Excellence, a recognition that speaks to the depth and thoughtfulness of the cellar.

The Vision Behind the Kitchen

Jean-Georges Vongerichten was born and raised on the outskirts of Strasbourg in Alsace, France. He trained under Paul Haeberlin at Auberge de l'Ill, then worked alongside Paul Bocuse and Louis Outhier at L'Oasis before traveling through Asia — Bangkok, Singapore, Hong Kong — where his culinary sensibility shifted decisively. That time in Asia led him to abandon heavy meat stocks and cream-based sauces in favor of vegetable juices, fruit essences, light broths, and herbal vinaigrettes. The result is a signature style that is simultaneously French in discipline and global in spirit — the foundation of everything served at The Mark.

His approach here is described simply as "fresh-from-the-market, simple cooking." The menu brings together subtly innovative European classics alongside his signature global seasonings, designed to satisfy both straightforward and more adventurous appetites. It is the kind of American fine dining that feels effortless rather than labored.

What to Expect on the Menu

The kitchen runs from early morning through late night, covering breakfast, brunch, lunch, dinner, and a dedicated late-night menu — a range that makes The Mark as practical for a weekday business lunch as for a leisurely Saturday brunch. The brunch menu gives a clear picture of the kitchen's range: Russ & Daughters Norwegian smoked salmon on a toasted bagel, Buttermilk Pancakes with sliced banana and mixed berries, and a Tuna Tartare with avocado and ginger marinade sit alongside a Black Truffle and Fontina Cheese Pizza and Slowly Cooked Faroe Island Salmon with carrot-ginger dressing. The Egg Caviar, featuring Petrossian Caviar JG Select, signals that the kitchen is equally at home with moments of pure luxury.

Sides reflect the same cross-cultural fluency: Maitake Mushrooms with sesame and lime, Grilled Avocado with fresh wasabi and yuzu dressing, and Roasted Brussels Sprouts with mint and aged Pecorino all appear on the same page as hand-cut French fries and mashed potato.

The Mark Bar

Separate from the dining room, The Mark Bar was designed by Jacques Grange with furnishings by Guy de Rougemont and Vladimir Kagan. The Daily News called it one of the best-designed spaces "in any city." It serves handcrafted classic and signature cocktails and stays open late — until 2:00 a.m. Tuesday through Saturday — making it a natural stop before dinner, after theater, or simply for its own sake.

The Breakfast Bar rounds out the offering with freshly baked pastries, yogurt parfaits, fresh fruit, and ready-to-go sandwiches — all overseen by Vongerichten's team, and available for guests who want to linger or simply grab something on the move.
