Saint Urban, on East 20th Street in Manhattan's Flatiron district, operates on a premise that's straightforward and quietly ambitious: the menu follows the wine. Each month, the kitchen and cellar turn their focus to a single iconic wine region of the world, building a multi-course French-influenced tasting menu and a curated wine selection that speak the same language.

The menu and pairings rotate monthly, tracking the culinary and viticultural traditions of whichever region is in focus. Dishes are shaped around the best available seasonal ingredients, and the kitchen continues refining the menu throughout the month as those ingredients evolve. Wine pairings are offered in multiple tiers to suit different levels of exploration, and on occasion a Domaine pairing draws exclusively from a single producer — a deeper dive for guests who want it.
The wine list itself is extensive enough to have earned Wine Spectator's Best of Award of Excellence in 2024, a recognition that reflects both the breadth of the cellar and the seriousness with which the program is assembled. Dinner at Saint Urban runs Tuesday through Saturday evenings. Guests choose from multi-course tasting menus designed to move through flavors in a considered progression — the kind of format that rewards attention without demanding it.
