A 360-degree panorama of the Tokyo skyline stretches in every direction, two large murals by Italian artist Valerio Adami line the walls, and live jazz drifts through the room throughout service. The restaurant earned a place on The World's 50 Best Restaurants list in 2003, a recognition that reflects both the quality of the kitchen and the singular experience the room delivers.

The Kitchen and the Menu

The cooking is described as unpretentious and enduring — a straightforward philosophy that suits an American grill of this calibre. An interactive open kitchen anchors the space, and the menu draws on prime US beef alongside carefully sourced Japanese cuts: Gunma Akagi ribeye, Kagawa olive-fed beef sirloin, Hokkaido tenderloin, and Hyogo Kobe sirloin all appear on the grill selection. Market-fresh seafood and locally sourced seasonal produce round out the offer.

Signature dishes that have stood the test of time include Caesar salad, Hokkaido seared scallops, crab cakes, garlic mashed potatoes, and cheesecake — classics that anchor the menu without overpowering it.

At the stove is Chef de Cuisine Ben Wheeler, who arrived at Park Hyatt Tokyo in 2024. Born in the United Kingdom and trained across properties including the Grand Hotel Kempinski Geneva, Emirates Palace Abu Dhabi, and Atlantis The Royal Dubai, Wheeler brings a broad international background to a kitchen with a clear identity.

Atmosphere and Occasions

The steakhouse format here is elevated but not stiff. A dress code applies — particularly in the evenings — and the room carries a sense of occasion without demanding formality. For private gatherings, a separate dining room on the 40th floor accommodates up to 12 guests, complete with an open kitchen and city views, suited to intimate dinners or special celebrations.
