Hudson & Co. occupies a commanding 12,000-square-foot, 300-seat space within the Plaza 10 office tower in Jersey City's Harborside district, right on the edge of the Hudson River. Every seat — whether inside or on the outdoor terrace — looks out across the water toward the Manhattan skyline, making the setting as much a part of the experience as what arrives at the table. Wine Spectator recognized the restaurant with its 2025 Award of Excellence, a distinction that reflects the seriousness of a program spanning over 120 beers, four rotating small-batch draughts, and an extensive list of wines and cocktails.
The menu is genuinely broad without feeling unfocused. Modern American cooking forms the backbone — think a 32oz bone-in Prime Tomahawk with herb butter and Bordelaise sauce, Braised Short Ribs over aged blue cheese potato purée, and a Blackened Scottish Salmon finished with preserved strawberry, yuzu vinaigrette, and fennel pollen. Japanese technique runs through the menu with equal confidence: Crunchy Rice Cakes topped with spicy tuna tartare, wasabi tobiko, and sweet soy; a full selection of specialty rolls including the Torched Tuna with bluefin, Serrano chilies, and eel sauce; and sashimi platters built around tuna, salmon, and yellowtail.
