The story begins with the Delmonico brothers, who arrived in New York and first operated a small shop selling pastries, fine coffee, wines, and Havana cigars. Their success led them to purchase a triangular plot of land nearby, where in 1837 they opened what would become a world-renowned institution. Among their earliest innovations: private dining rooms on the third floor and the largest private wine cellar in the city, holding 1,000 bottles of the world's finest wines. That wine culture endures — the restaurant holds Wine Spectator's Best of Award of Excellence for 2025, a recognition that reflects a list still filled to the rafters.

The Dishes That Defined a Nation's Table

The menu's history reads like a timeline of American gastronomy. Chef Alessandro Fellippini developed the Delmonico Steak — a prime ribeye — in the restaurant's early years. In 1862, Chef de Cuisine Charles Ranhofer invented Eggs Benedict, Baked Alaska, and Lobster Newburg within these same walls. All four remain on the menu today, prepared to their original specifications.

Executive Chef Adam Plitt now leads the kitchen alongside owner and executive culinary partner Dennis Turcinovic and managing partner Darko Matosic. Max Tucci, a descendant of Oscar Tucci — the Tuscan immigrant who saved Delmonico's from closure in 1926 after Prohibition shuttered it — serves as brand ambassador, keeping the family thread intact.

The current menu balances that storied heritage with careful sourcing. The signature 18oz Delmonico Ribeye comes from Brandt Family Farms in California. A 40oz Wagyu Côte de Boeuf and an A5 Miyazaki Snow Aged Strip Loin sit alongside the house's original Baked Alaska — banana gelato, walnut cake, apricot jam — created here in 1867. The Caviar Pasta with Golden Ossetra and the Royal Eggs Benedict with butter-poached king crab reflect how the kitchen extends tradition rather than merely repeating it.

The Room and the Experience

The 56 Beaver Street location has been renovated to reflect the opulence of its earliest years. The welcoming portico is still supported by the original Pompeian pillars. Private and semi-private dining rooms remain available for groups, with bespoke menus drawing on Delmonico's legendary American dishes, signature cocktails, and vintage wines. A smart casual dress code — polished and elegant — sets the register appropriately for a room with nearly two centuries of history behind it.
