For five decades, Ken Aretsky has run Aretsky's Patroon by a deceptively simple code: charm, simplicity, and elegance first. Natty in a bespoke suit, trim beard, and elegant eyeglasses, he greets guests with the ease of someone entirely at home — because he is. Steaks, Seasons, and a Room That Earns Its Reputation

Patroon has earned its place as a New York institution on the strength of its American menu and, above all, its steaks. The kitchen dry-ages beef for 36 days to develop full flavor, then finishes each cut over an open-fire grill using only Certified Angus beef.
