USDA Prime, Prepared with Intention

The kitchen's commitment to beef is specific and deliberate. Chops are grilled, strips are seared, and filets are broiled — each cut treated according to its character. The menu centers on USDA Prime Midwestern beef, aged to order, with cuts ranging from a Petit Filet to a 38 oz. Prime Porterhouse meant for sharing. The USDA Prime Strip is noted as Dick Brennan Sr.'s favorite cut, Creole seasoned and finished in a cast iron skillet — a detail that says something about the continuity this family brings to the table.

For larger gatherings, the Chateaubriand (a 20 oz. tenderloin) and the Beef Wellington — tenderloin wrapped in mushroom duxelles, Creole mustard, house tasso, and baked in butter pastry — arrive with seasonal vegetables, au gratin potatoes, mushroom sauté, creamed spinach, and three house-made sauces.
