The kitchen's own philosophy puts it plainly: "New Orleans cooking is like jazz. The world is fascinated by the possibilities that can result when good jazz musicians sit together and make music. So it is with our cooking." That spirit — improvisational, rooted, alive — runs through everything here, from the legendary Jazz Brunch to the constantly evolving menu that recently earned coverage for a gumbo-inspired dessert that started as, in the restaurant's own words, a "crazy idea."

Every Wednesday, Thursday, and Friday, Commander's Palace runs its now-famous 25¢ Martini Lunch. The martinis are, as the restaurant is careful to note, really 25¢.
