Behind the list is a team with real credentials. Gretchen Thomas, VP of Food & Beverage Innovations, is a certified Spanish Wine Educator from the Wine Academy of Spain who scored in the top 15 in the world on that exam — and has also blended her own tequila. Beverage Director Emily Nevin-Giannini holds an Advanced Certification from the Wine & Spirits Education Trust, a Master Certification in Rioja Wines, and a Certified Sherry Wine Specialist designation. She travels extensively to source wines from small producers committed to quality methods.

The program leans into Spain's most compelling regions — Rioja, Ribera del Duero, Priorat, Bierzo — and dedicates real attention to biodynamic and natural producers. The team's thinking on biodynamic winemaking is worth noting: they frame it not as a trend but as a return to a simple question — how can I help the earth make the healthiest grapes? Producers like Bernabeleva from Sierra de Gredos and Gramona, makers of exceptional Cava, appear alongside some of the most celebrated names in the wine world.
