The centerpiece of the menu is Florida stone crab. Truluck's works directly with crabbers harvesting from the Florida Gulf and Atlantic coasts, and the claws travel from the traps to the table in less than 24 hours. Not a single one is frozen. During stone crab season — October 15 through May 1 — the kitchen serves over 300,000 claws across the group. The sustainability credentials are genuine: only claws meeting the legal minimum size are taken, the crab is returned to the water alive, and the claw regenerates naturally over subsequent molts. It is one of the more thoughtfully sourced ingredients in American fine dining.
Beyond the crab, the menu spans prime hand-cut steaks, classic and seasonal seafood dishes — including a miso seabass that the Florida culinary team singles out for its technical demands — and Ōra King Salmon, responsibly raised and available as a seasonal feature. The menu's Mediterranean leanings are intentional: Beverage Director Dave Mattern has assembled an Italian-leaning wine list that pairs deliberately with the kitchen's flavors, earning the Wine Spectator nod and offering everything from Sardinian Vermentino to Piedmontese Nebbiolo alongside the seafood.
The culinary structure at Truluck's is unusually deep for a multi-location group. Corporate Executive Chef Thomas Dritsas leads menu development, while Director of Culinary Operations Chef Samir Canaan — with nearly two decades at the company — oversees execution across all twelve restaurants. Florida and Illinois locations fall under Regional Chef Partner Odel Arencibia, who came up through the industry and now trains chefs across multiple states. Chef Partner Manny Vera, who has been with the group for over 25 years, exemplifies the culture of longevity and mentorship that runs through the organization. As Vera puts it: "Truluck's took this fool from the hood, cared for me, taught me and believed in me."
That culture shows at the table. Guests consistently note that the service feels personal — staff who offer genuine recommendations, managers who know who is coming in. The atmosphere is elegant without being stiff.
The beverage program is a destination in its own right. Nightly Happy Hour offers half off handcrafted cocktails, wines by the glass, and freshly shucked oysters in the bar. The Martini Experience — four distinct martinis, each available as a full pour or a petite Tiny Tini — was designed by Mattern to open the palate before a meal. The bar also pours a limited Truluck's Reserve single-barrel Elijah Craig bourbon, aged over nine years at 132.2 proof, hand-selected by Mattern and available only while the barrel lasts.
For private events, the Naples location offers flexible dining spaces suited to everything from rehearsal dinners to corporate gatherings, with a dedicated event planning team that handles every logistical detail.
