The restaurant is led by Chef Patrick Callarec, a native of Périgueux, France, who entered a specialized French culinary academy at the age of 13. Over a career spanning more than 40 years across kitchens around the world, Callarec earned the prestigious title of Maîtres Cuisiniers de France in 2023 — one of the highest distinctions in the French culinary tradition. That classical foundation shapes the precision behind Olive & Hay's Italian-American cooking in ways that guests feel on the plate without needing to be told.
What sets the brunch program apart is its sourcing: eggs and produce come directly from the resort's own vineyard garden and chicken coop.
