Chef Daniel Van Norman and the Art of Knowing the Source

Chef de Cuisine Daniel Van Norman has been working with the Swinomish tribe since 2005, and his connection to the region runs deep — he's personally acquainted with the local tribal fishermen and is an avid angler himself. That relationship with the water translates directly to the plate. Van Norman has built expertise in identifying the freshest seasonal seafood varieties and the most fitting methods of preparation, complemented by a fluency with native indigenous ingredients. He refined his technique assisting executive chefs in Vancouver, Canada, developing what the restaurant describes as "vibrant, yet elegant flavors with a contemporary presentation."

The menu centers on hand-cut, alder wood-grilled seafood and meats — a cooking method that carries real regional meaning, alder being a wood long used in Pacific Northwest Indigenous food traditions. Ingredients shift with the season, keeping the menu honest and the flavors at their peak.
