The building itself anchors the restaurant's identity — its name, its character, and its sense of place all trace back to that original structure on East Fourth Avenue.

The kitchen's allegiance is to the region. 1921 Mount Dora works closely with local farms and purveyors within Mount Dora and the surrounding area, maintaining a commitment to growers, producers, and food artisans across Florida and the Southeast. Fresh seafood, locally sourced proteins, and seasonal produce shape a menu that celebrates modern American cooking while honoring time-honored Florida traditions — without pretension.

The Team Behind the Restaurant

Executive Chef Brenton Hillman, a Le Cordon Bleu Orlando graduate and Wyoming native, has spent over two decades serving Lake County diners. His focus is straightforward: highlight the finest ingredients the region can offer, from fresh seafood to produce from local farms. Before arriving at 1921, he honed his craft at several Mount Dora establishments, giving him a deep familiarity with the community he now cooks for.

Overseeing the front of house and the wine program is General Manager and Wine Director Adam Crane, a Certified Sommelier through the Court of Master Sommeliers and a UCF Rosen School of Hospitality Management graduate. His background includes leadership roles at some of Orlando's most respected restaurants, and his curation of the wine list earned 1921 Mount Dora the Wine Spectator Best of Award of Excellence in 2024 — a recognition that reflects both the depth of the cellar and the seriousness of the pairing program.
