A Family Obsession, a Century in the Making

The story begins in 1916, when a Polish immigrant named Joseph Czarnecki opened Joe's Tavern in Reading, Pennsylvania, serving bowls of wild mushroom soup for twenty cents. That single-minded devotion to foraged fungi passed through four generations — Joseph Jr., then Jack (whose mushroom cookbook won a James Beard Award), and finally to the current chef-owner, Christopher Czarnecki — before finding its natural home in the northern Willamette Valley. In 1996, Jack and his wife Heidi purchased and renovated the historic Joel Palmer House in Dayton, Oregon, converting a building that had sat abandoned for over two decades into one of the Pacific Northwest's most distinctive fine-dining destinations.

The house itself earns its place on both the Oregon and National Registers of Historic Places. Built in 1857 by Joel Palmer — pioneer, statesman, and co-founder of Dayton — it retains original Classical Revival details: a hand-grained paneled wainscot, a classical east parlor chimneypiece, and multi-pane sidelights framing the front entrance. Tasteful renovations in 2021 refreshed the dining rooms without diminishing any of that character, and the wooden chairs Jack and Heidi brought from Pennsylvania still anchor the room, quietly connecting past to present.

Christopher Czarnecki and the Kitchen He Inherited

Christopher grew up bussing tables at his parents' restaurant at age nine. He left for the US Army in 2003, served in Iraq, and returned to Dayton in 2006. By 2008, the restaurant was fully his. His approach to American fine dining is defined by what the land provides: a seasonally changing tasting menu built on foraged mushrooms, produce grown on-site, and local ingredients interpreted through global technique. Foragers still arrive at the back door with the day's finds; the kitchen takes it from there.

Alongside Christopher, Director of Hospitality and Head Sommelier Levi Seed — a trained chef, certified sommelier, and childhood leukemia survivor whose resilience is as evident in the dining room as it is in his biography — has shaped the front-of-house into something equally serious. Together, they've secured the Joel Palmer House's designation as the Pacific Northwest's first and only Château d'Yquem Lighthouse Restaurant, one of roughly forty dining rooms worldwide entrusted to present d'Yquem by the glass.

The Cellar That Sets It Apart

The wine program is, in a word, singular. Over 600 selections, 95% from Oregon, spanning recent releases to mid-1990s vintages from producers who no longer hold those bottles themselves. Cult labels, library verticals, library access — this is the country's largest Oregon Pinot Noir list, and it has earned Wine Spectator's Best of Award of Excellence continuously since 2010.
