The story
Pazzeria by Pietro's is part of a larger Italian hospitality legacy that began in 1979, when Pietro Filippazzo and his wife Rosaria co-founded Pietro's Pizza. With more than 45 years in the pizza business, Pietro developed the recipes and operational standards that still guide the family's restaurants today. Rosaria's devoted attention to detail — and her instinct for knowing what customers want — shaped the warmth that runs through every location.
The next generation carried that foundation further. Joseph Filippazzo, with a background in marketing and advertising, focused on growth and developing new concepts. His brother Steven (Stefano) grew up behind the counter and returned to the business after his studies, bringing operational discipline and leadership to the group. Together, they have positioned the Filippazzo Hospitality Group as a regional force in East Texas dining.
