Evolution Bistro & Bar — known to regulars simply as EVO — arrived on Elm Street in downtown Manchester with a clear sense of purpose: bring the flavors and techniques of Europe home to New England, without the formality that so often comes with them. The team behind EVO traveled widely and returned with a conviction that great food belongs to everyone. "We started this restaurant for the joy of eating," they say, and the menu reflects exactly that — ambitious enough to earn a Wine Spectator Award of Excellence, relaxed enough to welcome you in jeans.

The Food

The kitchen leans into fresh-made pasta as its backbone. Ricotta gnocchi, hand-rolled spaghetti, house egg-dough ravioli — these are made daily and form the core of a menu that moves confidently between Italian, Greek, and broadly European reference points. The Gnocchi à la Crème (house-made ricotta gnocchi, garlic cream, roasted spinach, mushroom, tomato, seared pancetta) has drawn particular praise from guests, one of whom noted the pillowy texture with enough enthusiasm to clear the plate. The Lobster Ravioli — house-made egg dough filled with lobster and ricotta, finished with a mustard-tarragon sauce and roasted artichoke — sits at the more indulgent end of the pasta list.

Starters span smoked burrata made in-house, baked oysters with sriracha whipped butter and prosciutto dust, candied pork belly with fig spread and balsamic glaze, and a chef's carpaccio-style vegetable selection that changes with the season. Entrées include a 12 oz hand-cut NY strip served with blue cheese butter and Maldon salt, a Faroe Island salmon poached in garlic oil with beurre blanc, and an 8 oz filet with bordelaise. The smash burger — a double-patty Tuscan version with house mozzarella, crispy prosciutto, and pesto mayo — rounds out a menu that takes the full range of American dining seriously.

Desserts stay true to the European-leaning identity: tiramisu, limoncello cake, cannoli dip, and daily gelato and sorbet.

The Bar and Wine Program

The wine list earned EVO its Wine Spectator Award of Excellence — recognition that reflects a program described as one of the best selections in Southern New Hampshire. Each bottle is chosen for quality, character, and balance across a diverse range of varietals and regions. The cocktail program is equally considered, running from smoky and spirit-forward to bright and citrus-driven. EVO also hosts a Whiskey Club and runs recurring special events — multi-course dinners paired with Suntory Japanese whiskeys, Casa Noble tequila, and Italian wine producers — that give the room a life well beyond a standard dinner service.

The Atmosphere

Dim lighting, good music, and a room that feels genuinely alive — guests consistently describe EVO as the kind of place the conversation continues about long after leaving. The American-European cuisine comes without a dress code or any sense of occasion being imposed. Whether it's a post-work cocktail, a date night, or a private event, the space adapts. Valet parking is available, and the kitchen runs Tuesday through Saturday evenings.
