Nouvelle Bar & Bottle operates on a straightforward philosophy, borrowed from the French: "La vie est trop courte pour boire du mauvais vin" — life is too short to drink bad wine. On South Clay Street in Louisville, that conviction translates into a wine bar and bottle shop focused on producers who grow rather than manufacture, wines that tell a story, and a room with enough energy and good music to make the whole thing feel genuinely alive.
The Wine Spectator Award of Excellence, earned for 2025, reflects what sets Nouvelle apart from a typical neighborhood pour: a selection serious enough to satisfy collectors, approachable enough to welcome anyone curious about what's in the glass.
Owner John Grisanti grew up in Louisville hospitality — his father, Michael Grisanti, is a local restaurateur — but he went out and built credentials of his own before coming home. A Culinary Institute of America graduate who spent two years immersed in Napa Valley's wine and hospitality world, he then cooked at the Michelin-starred The Breslin in New York City before returning to Louisville. His certifications span the breadth of the industry: Certified Sommelier (Court of Master Sommeliers), WSET III, Champagne Master through the French Wine Scholar Guild, Certified Specialist of Wine and Spirits, and Certified Cicerone. That range shows up in what Nouvelle stocks and how the staff talks about it.
The wine bar runs a by-the-glass list that rotates often and seasonally, but the deeper draw is the bottle shop side — over 100 selections available to drink in-house or take home, plus a reserve cellar program described simply as the "Secret Stash." The crown jewel is what Nouvelle calls its "Completely Irresponsible Champagne List," a comprehensive, grower-producer-focused selection that reflects Grisanti's particular obsession with Champagne.
Beyond wine, properly made craft cocktails and delicious small plates round out the experience.
