The steakhouse sources prime cuts from the finest ranches in the United States and pairs them with a curated selection of American and Japanese wagyu. More remarkably, SW is among a small number of restaurants in the country offering certified, authentic Kobe beef from Japan's Hyogo Prefecture — each cut accompanied by the animal's noseprint and pedigree. It's an unusual level of transparency for any dining room, let alone one on the Las Vegas Strip.
Sides are treated with the same seriousness as the main event. Black truffle creamed corn and baked fennel mac and cheese have become guest favorites — the kind of dishes that get ordered on instinct by regulars and remembered long after the visit.
