The story
Smith & Wollensky's story began in New York City in 1977, when founder Alan Stillman and an eclectic group of locals built a steakhouse around a simple conviction: that hard work, quality, and genuine hospitality were enough. Nearly five decades later, the Las Vegas location at the Grand Canal Shoppes in the Venetian Resort carries that same ethos — "classic dining for the ultimate Las Vegas experience," as the brand puts it — whether the occasion is business, pleasure, or a little bit of both.
Leading the Las Vegas operation is Managing Partner Matthew Griffith, who spent 14 years at S&W Las Vegas as a manager and ultimately General Manager before returning in 2019 to oversee the new Venetian Resort opening. That continuity of leadership shows in the room: the confidence of a place that knows exactly what it is, with no need to chase trends.
The foundation of the menu is USDA Prime beef — grain fed, humanely raised, and aged in-house for a minimum of 28 days to intensify natural flavor and tenderness. Cuts are sourced from a network of small family farms through partners Double R Ranch and Snake River Farms. The signature Swinging Tomahawk — a 44 oz. American Wagyu bone-in ribeye finished tableside with a hand-seared crust — is the kind of dish that defines what a serious steakhouse can do. Beyond beef, a Signature Seafood Tower stacked with colossal crab, Maine lobster tail, jumbo shrimp, and oysters on the half shell shows the kitchen's range, while the ten-layer Gigantic Chocolate Cake with Baileys Irish Cream and chocolate ganache closes a meal with appropriate drama.
Every detail is considered: custom steak knives designed specifically for S&W, an obsession with sourcing, and a wine list that earned the Wine Spectator Award of Excellence — recognition that reflects the depth and care of a cellar curated by National Beverage Director Christian Gianaris, whose 30-year career in food and beverage informs every pairing.
The Las Vegas location offers private event spaces for gatherings of all sizes, with the flexible, top-tier service the brand is known for. For those who want the steakhouse experience at home, S&W's sauces and rubs are available to order online — a small but telling detail about a brand that takes its product seriously at every touchpoint.
