Where American Steakhouse Dining Meets a Four-Star Vision

At the Bellagio on the Las Vegas Strip, PRIME Steakhouse operates under the creative direction of Jean-Georges Vongerichten — the four-star celebrity chef and restaurateur whose philosophy is simple and disarming: "I think the role of a chef is not just to cook, but to create cravings." The newly reimagined space lives up to that standard, bringing together prime steak, seafood, and lamb with fabulous sauces, carefully chosen sides, and a wine program that has earned Wine Spectator's Best of Award of Excellence.

The dining room wraps guests in a palette of chocolate brown and Tiffany blue, a combination that feels simultaneously handsome and relaxed. The garden patio — capable of seating up to 80 guests — opens directly onto one of Las Vegas's most iconic sightlines: the Fountains of Bellagio. It is the kind of setting that makes a dinner feel like an occasion without demanding that it be one.

The menu at this American steakhouse anchors itself in exceptional sourcing. The F1 Wagyu Beef stands out for its provenance — a cross that fuses the succulent marbling associated with A5 Miyazaki-Gyu with the robustness of Holstein lineage, producing something genuinely distinct. The Lobster Cobb Salad for Two, built on gem lettuce with cheddar, hard-boiled egg, and a sriracha dressing, signals that the kitchen is willing to be playful.
