The story
Morton's The Steakhouse traces its origins to an unlikely moment: co-founders Arnie Morton and Klaus Fritsch, both working at the Playboy Club in Montreal, connected over a hamburger that Arnie declared the best he'd ever tasted. That exchange — and the "Million-Dollar Hamburger" it produced — set the foundation for what would become one of America's most recognized steakhouse groups. The first location opened on State Street in Chicago in 1978, and the guiding principles established then — quality, consistency, and genuine hospitality — remain unchanged across more than 65 locations worldwide, including this one on East Flamingo Road in Las Vegas.
The Las Vegas location upholds the same sourcing commitment that has defined Morton's from the start. The kitchen works with the same suppliers used since day one, sourcing USDA prime-aged beef that represents the top two percent of beef available in the United States. If a cut doesn't meet Morton's standards, it doesn't reach the plate. Alongside the steakhouse's signature beef, the menu extends to fresh seafood — Chilean sea bass, oysters on the half shell, colossal shrimp, and red king crab legs — with seasonal additions that rotate regularly. Recent additions to the menu include a Prime Bavette Steak Frites, Wagyu Beef Stroganoff, and Oysters Rockefeller, alongside a Lobster & Crab Cocktail.
The dining room balances elegance with energy: sophisticated enough for a business dinner or a special occasion, lively enough that the bar scene at Bar 12-21 holds its own, fueled by hand-crafted cocktails, craft brews, and chef-selected bites.
The wine program is a genuine point of distinction. Morton's holds a Wine Spectator Award of Excellence, and the list at each location runs to more than 300 labels, spanning rare cult classics, sommelier-curated selections, and rotating Bottle Shock features chosen for quality and value. An on-site Wine Locker program allows guests to store personal bottles, and the restaurant's team — general managers and sommeliers — is available to guide pairings and deepen the experience. Morton's has also introduced a private label, "State & Rush," honoring its Chicago roots with Cabernet Sauvignon, Chardonnay, and Pinot Noir sourced from Oak Ridge Winery in Lodi, California.
For groups, the private dining rooms accommodate business functions, celebrations, and catered events, with dedicated menus and the option of chef-selected formats. Morton's also partners with athletes and charitable foundations for Prime Events — seasonal wine dinners and exclusive one-of-a-kind menus that make full use of the intimate private spaces.
