Forbes Travel Guide recognized that commitment with a Four-Star award, noting a menu so expansive that even seasoned devotees of Japanese cuisine are likely to encounter something new.
What sets Mizumi apart from most Japanese restaurants — in Las Vegas or anywhere — is the range of formats available within a single address. The Dining Room offers both à la carte and omakase service, the latter being the format that defines the restaurant's ambitions: a chef-guided progression through the finest available ingredients, with no decisions required of the guest beyond showing up. The Sushi Bar pairs diners directly with a sushi master for a more personal exchange. The Teppanyaki Room turns dinner into live performance, with expert chefs cooking on communal grill tables in a setting that manages to be theatrical without sacrificing the refinement expected of fine dining.
Then there is Sansui Dining — a floating table on an outdoor koi pond, designed for those who want the Strip's energy at a comfortable remove, under open sky. The kitchen is led by Executive Chef Jeff Ramsey, whose biography reads like a deliberate education in Japanese culinary tradition. He trained in Japan and earned a diploma as a Master of the Art of Sushi, then worked as sous chef at Minibar by José Andrés before returning to Asia. At Tapas Molecular Bar in the Mandarin Oriental Tokyo, he earned and held a Michelin star from 2009 to 2011. His own restaurant, Kintsugi by Jeff Ramsey in Bangkok, received Michelin recognition in 2022 and 2023, with a second location following in Kuala Lumpur. Ramsey joined Mizumi in 2024.
The omakase philosophy here doesn't exclude — it adapts. Forbes noted Mizumi's particular strength for vegetarian and vegan guests, with classic rolls, tofu-based miso soup, and Japanese noodle dishes among the options. The cocktail bar stocks Japanese whisky and sake for those who want to begin the evening deliberately before moving to the table.
