The man behind it all grew up in Egypt, where, as Mina himself has noted, the expected career paths ran to doctor, lawyer, or engineer. His pivot to cooking school came as a surprise to his family — and ultimately produced one of America's most recognized seafood-driven American fine dining concepts.

The Seafood, the Raw Bar, and the Kitchen's Craft

Seafood is the kitchen's defining language. Ingredients are flown in daily, and the menu moves between a raw bar of fresh shellfish and carefully composed hot preparations. The Charcoal-Grilled Hot Shellfish brings together King Crab, Pacific and Atlantic Oysters, Gulf Prawns, Maine Lobster, and Diver Scallops, finished with Yuzu Kosho Butter and Miso. The Hamachi Provençal arrives raw in a chilled cucumber-serrano broth with harissa-roasted cherry tomatoes and sauce vierge. The Ahi Tuna Tartare — sushi-grade fish with toasted pine nuts, Asian pear, habanero-infused sesame oil, and mint — has become a signature.
