The story
Few restaurants in Las Vegas carry the history of Le Cirque. Founded by Sirio Maccioni and housed within the Bellagio on the Strip, it has spent nearly three decades earning a place among the city's most celebrated fine dining destinations — recognized by Forbes Travel Guide with a 5-Star Rating, AAA with a Five Diamond Award, and La Liste among the top 1,000 restaurants in the world for 2026. Wine Spectator's Best of Award of Excellence further underscores the seriousness of what happens here, particularly at the table.
The dining room, designed by Adam D. Tihany, is an exercise in joyful opulence — brilliant color, intimate scale, and a lakeside setting that makes every evening feel like an occasion. Executive Chef Jonathan Doukhan, recognized by StarChef for his work among leading executive chefs across the country, leads a kitchen that stays true to the French tradition while bringing bold contemporary energy to the plate.
The wine program matches that ambition. More than 900 international selections, with particular depth in France's finest regions, are overseen by sommeliers Freddy Montandon and Mark Hefter — a team whose expertise elevates the French cuisine on every level.
Signature dishes have defined the Le Cirque experience over the years: Ossetra Caviar, Ricotta Gnudi, the "Under the Sea" preparation of Alaskan King Crab with avocado and caviar, and the "Black Tie" Hokkaido Scallop with truffle jus and baby spinach. These are dishes built with intention — refined without being austere, celebratory without being excessive.
Le Cirque is currently offering a farewell prix fixe menu — a specially curated selection inspired by the restaurant's most beloved dishes — before its final service on August 23. For anyone who has dined here before, it is a rare chance to return. For those who haven't, it is the last opportunity to experience what Travel+Leisure named one of the Top 20 Iconic Las Vegas Restaurants.
