The story

Le Cirque, situated inside Bellagio on the Las Vegas Strip, has spent nearly three decades earning its place among the city's most celebrated fine dining destinations — and the accolades have followed accordingly. The restaurant holds a perennial Forbes Travel Guide Five-Star rating, an AAA Five Diamond Award, and a spot on La Liste's Top 1,000 Restaurants in the World for 2026, as well as Travel+Leisure's Top 20 Iconic Las Vegas Restaurants.
Designed by Adam D. Tihany, the dining room is an unapologetically theatrical space — bold, saturated colors, a flowing canopy evoking the big top, and playful circus-themed paintings across the walls. The effect is opulent without being stiff: a jewel box setting that makes celebration feel inevitable. Overlooking the Bellagio lake, it's a room that sets expectations high before a single dish arrives.
Executive Chef Jonathan Doukhan — recognized by StarChef for his work among the country's leading executive chefs — leads a kitchen rooted in classic French technique. The potato-crusted Mediterranean sea bass has long been a signature, while the rabbit symphony with Riesling mustard cream sauce and the Japanese wagyu beef strip loin speak to the range and ambition of the menu. Among the celebrated starters, the "Under the Sea" Alaskan King Crab with avocado and caviar and the Le Cirque "Black Tie" — Hokkaido scallop with truffle jus and baby spinach — have become emblematic of the kitchen's refined French sensibility with bold contemporary touches. Ossetra caviar and ricotta gnudi round out a menu built on precision and restraint.
The wine program matches the kitchen's ambition: more than 900 international selections with a particular focus on France's finest regions, overseen by sommeliers Freddy Montandon and Mark Hefter. Service throughout the evening is attentive and unhurried — the kind that makes a long dinner feel like a privilege rather than an indulgence.
