The story
The stone crab on your table has a history. Joe Weiss and his wife Jennie discovered Florida stone crabs as an unknown delicacy in the early 1920s and began serving them at their restaurant in Miami Beach. The claws are hand harvested one at a time, then the crabs are returned to the sea — a practice as sustainable as it is distinctive. That origin story travels with every plate, and today the familiar crack-crack-crack can be heard right on the Las Vegas Strip at 3500 Las Vegas Blvd S.
Joe's Las Vegas is a seafood and steakhouse in the fullest sense of both words. The stone crab — served chilled with Joe's mustard sauce, in sizes from medium to large at market price — remains the centerpiece, but the menu covers serious ground. On the seafood side: butter-poached sea scallops, colossal lump crab cakes, Dover sole with brown butter sauce, Chilean sea bass with miso glaze and bok choy, and a raw bar featuring oysters on the half shell and ahi tuna tartare. For those drawn to the steakhouse side, the bone-in signature prime cuts are hand-carved by master butchers exclusively for Joe's, prized, as the menu puts it, for their "rich, on-the-bone flavor and melt-in-your-mouth tenderness." A 32 oz. porterhouse and a 24 oz. bone-in rib eye anchor that section, with classic accompaniments — Jennie's mashed potatoes, Joe's famous grilled tomatoes, creamed spinach — that feel deliberate rather than obligatory.
Servers wear tuxedos; guests are encouraged to dress in upscale casual and feel comfortable. That contrast — formal service, relaxed atmosphere — sets the tone well. The wine program earned a Wine Spectator Best of Award of Excellence, a recognition that reflects both the depth of the list and the care taken in building it. Guests are also welcome to bring a rare or collectible bottle not found on the menu, subject to a corkage fee.
Beyond dinner, Joe's Las Vegas serves lunch, accommodates private parties, and offers the full menu for carryout and delivery. The Whale — king crab, lobster, jumbo shrimp cocktail, and oysters on the half shell — makes a statement as a shared appetizer whether you're celebrating or simply eating well on a Tuesday.
