The room is quiet and intimate, its aesthetic thoroughly at odds with the spectacle surrounding it. That deliberate contrast is the point.
The restaurant holds Three Michelin Stars and carries a Forbes Travel Guide Five-Star rating, a AAA Five Diamond designation, and Wine Spectator's Grand Award — a convergence of recognition that places it among the most decorated dining rooms in the United States. Forbes inspectors noted what sets it apart in precise terms: a kitchen so well-organized and spotless you could hear a pin drop, and a dining room where every element — from host to waiter — operates at the same exacting level.
The tableside carts are the signature of the experience. It begins with butter service: a domed block of Brittany butter carved with a warm spoon, swirled onto a plate, followed by a presentation of eighteen different breads. From there, carts bearing whole tea plants, an extraordinary cheese selection, and a mignardises trolley of delicate sweets mark the rhythm of the meal. The ingredients throughout — caviar, truffles, and whatever is finest at the moment — reflect the founding philosophy of Joël Robuchon himself: "To make a grand meal, you have to make it simple. You need the highest quality products, the best equipment, and you have to keep the focus on the original flavor of the product."
Today the kitchen is led by Chef Eleazar, named a 2025 James Beard Award Finalist in the Best Chef: Southwest category — recognition that underscores how the restaurant has maintained its standards well beyond its founder's lifetime. The French fine dining tradition established here remains intact: precise, ingredient-driven, and unmistakably serious without being cold.
For parties of seven or more, the restaurant offers private dining arrangements through a dedicated reservations line. Valet parking is available, and the restaurant opens for dinner Thursday through Monday.
