At the center of everything is Executive Chef Billy Cheng, who brings more than 40 years of experience to the role. He grew up in Guangdong, China, inspired by his father's passion for cooking and his family's involvement in the restaurant business. His path took him through Hong Kong, Taiwan, Canada, and eventually to the Las Vegas Strip — beginning at Moongate at The Mirage in 1999. He earned the American Masters of Taste Gold Medal during his time at Shanghai Lilly in Mandalay Bay, before leading Jasmine at Bellagio from 2011 to 2021, where he orchestrated the Chinese New Year Gala Dinner for thousands of guests across multiple years. Cheng's stated mission at Genting Palace is straightforward: ensure that every guest can enjoy authentic Chinese dishes, wherever they come from.

Black truffle dumplings stuffed with lobster, scallops, and shrimp arrive shaped like orange-tinged boats; shrimp dumplings come encased in a pink wrapper, each topped with half a quail egg.
