Inside the MGM Grand Las Vegas, Emeril's New Orleans Fish House is where Chef Emeril Lagasse channels his Louisiana roots into what he calls "New New Orleans" cooking — a fresh take on classic Creole dishes that puts market-fresh fish and shellfish at the center of the table. Alongside the seafood, the menu rounds out with flavorful steaks, pork, and chicken, giving the kitchen range without losing its coastal identity.

The space itself reinforces that sense of place. Designed by New York's Rockwell Group around a sea-inspired aesthetic, the dining room manages to feel closer to the Gulf Coast than to the Las Vegas Strip just outside the doors. For a more personal experience, the Chef's Table offers an ever-changing tasting menu — the kind of meal that shifts with the season and the market.

The Team Behind the Kitchen

Chef de Cuisine Ken Lum brings over 28 years of culinary experience to the pass, including earlier stints at this very restaurant going back to 1998. His background spans fine dining in Hawaii — La Mer among them — before returning to the Emeril's fold. The front of house is led by General Manager Tyler Anderson, a Las Vegas native who has been part of the Emeril's family for more than 14 years. Completing the picture is Sommelier Louis Hamilton, a Level 2 Certified Sommelier with nearly two decades of Las Vegas wine experience, previously working alongside Daniel Boulud at the Wynn and Charlie Palmer at Aureole.

That wine program earned Wine Spectator's Best of Award of Excellence — recognition that speaks to the depth and care behind the list, and one reason the restaurant stands out even in a city full of ambitious dining rooms.

A Name with Real Weight

Emeril Lagasse is the chef/proprietor of eight restaurants across New Orleans, Las Vegas, Florida, and at sea. He has hosted more than 2,000 shows on the Food Network, received five Daytime Emmy nominations for his Amazon series Eat the World with Emeril Lagasse, and was named Humanitarian of the Year by the James Beard Foundation in 2013. His Emeril Lagasse Foundation has distributed over $18 million in grants supporting children's educational programs. The American cooking he champions — bold, rooted, technically grounded — is exactly what drives the menu at the Fish House.
