Bazaar Mar by José Andrés occupies a bright, theatrical space inside The Shops at Crystals, and its premise is refreshingly direct: the freshest fruits of the sea, prepared exactly how Chef José Andrés loves them. The menu reads like a personal declaration — the whole fish section even opens with a quote attributed to the chef himself: "C'mon, guys...this is why you are here!" That kind of confidence, rooted in genuine craft, is what sets this Spanish seafood restaurant apart from the spectacle that surrounds it on the Strip.

What's on the Plate

The menu moves fluidly between Spanish tradition and global influence. Little Snacks anchor the experience — José's Taco layers jamón Ibérico de bellota, Osetra caviar, and gold leaf on nori; Puntillitas Fritas brings baby squid fried simply, "as they do in the south of Spain." The Jamon Experience features hand-cut Paleta Ibérica de Bellota from Cinco Jotas in Jabugo, Andalucía, served with optional Catalan-style pan de cristal rubbed with fresh tomato.

Oysters arrive five ways: raw on the half shell, dressed with lime and tequila pomegranate air, as a leche de tigre ceviche, grilled with smoked butter, or cooked in a traditional Catalan fisherman's suquet with saffron and potato. Whole fish — offered as sashimi, baked in sea salt, live-fire grilled, or whole fried — are sourced seasonally and priced accordingly, the undisputed centerpiece of the Spanish seafood menu. The Rossejat, a toasted-pasta take on paella finished with spider crab gratin, anchors the heartier end of the menu.

For those less drawn to the ocean, Akaushi Wagyu cuts and a Josper-roasted chicken share the menu without competing for attention.

The Space and the Bar Below

The dining room is described as bright and theatrical — an indoor seascape that brings the ocean's depths to the desert. One level down on the mezzanine, Bar Centro offers a more casual counterpoint: cocktails, tapas, and caviar-centered bites in the evening, coffee and pastries earlier in the day.

Wine Spectator recognized Bazaar Mar with its Award of Excellence in 2025, a fitting acknowledgment for a restaurant where the beverage program — from Spanish wines to a dedicated caviar experience pairing Amur Osetra and Amur Beluga — is treated with the same seriousness as the food. Complimentary valet parking is available on Las Vegas Boulevard for all guests.
