The story
Bavette's Bar & Boeuf began in Chicago and carried its reputation south to the desert, landing inside Park MGM at 3770 Las Vegas Blvd. The Las Vegas outpost operates under Hogsalt, the hospitality group behind the original, and brings the same commitment to serious American steakhouse cooking that earned the brand its following. Wine Spectator recognized the program with its Award of Excellence in 2022 — a reflection of how carefully the beverage side has been built alongside the kitchen.
The menu centers on beef handled with intention. The "Le Boeuf" section runs from a 6 oz Petite Duchess Cut Filet Mignon up through a 32 oz Porterhouse, with several cuts dry-aged for 42 days in-house — the Bone-In Ribeye and Bone-In New York Strip among them. For those who want American Wagyu specifically, Snake River Farms supplies both a Skirt Steak Frites and a 16 oz Bone-In New York Strip. Every steak arrives with béarnaise and steak salt as the baseline, with optional enhancements — roasted bone marrow, warm king crab oscar, sauce au poivre — available to build the plate further.
Beyond the steakhouse anchors, the kitchen moves through chilled seafood towers (including the signature "Maude's" configuration), a Peppered Duck & Goat Cheese Terrine, Baked Crab Cake with preserved lemon and rémoulade, and a Tenderloin Steak Tartare finished with dijonnaise and a slow-cooked egg. The Baked Goat Cheese — on the menu since 1992 — travels from Chicago intact, as does the Double Wagyu Cheeseburger built from pressed and griddled Snake River Farms beef.
Walk-ins are genuinely welcome at the bar, where the full menu is served — a practical detail that matters on the Strip. For larger gatherings, private dining is available for groups, and the room accommodates both intimate dinners and more formal events. The cocktail and wine program, recognized by Wine Spectator, gives the beverage menu the same weight as the food, making this a destination for wine-focused diners as much as those drawn purely by the American steakhouse tradition.
