The Chef Behind the Table

Cuvee 30A is the flagship fine dining venue of Chef Tim Creehan, a Certified Executive Chef whose career reads, in his own words, like the American dream. Born in Connecticut and raised in Baton Rouge, Louisiana, Creehan trained under Cordon Bleu French Chef Philippe Parola and was named by the American Culinary Foundation as one of the "youngest and most accomplished Certified Executive Chefs in the United States" back in 1992. He went on to cook in Central Park, Hong Kong, Beijing, and at the Sundance Film Festival before planting his most enduring flag on Florida's Gulf Coast. In 2015, he opened Cuvee 30A at the 30Avenue development in Inlet Beach, at the junction of Scenic 30A and Highway 98 — a location that puts it within minutes of Rosemary Beach, Alys Beach, and the broader South Walton corridor.

The Room and the Wine

The restaurant describes its approach as "casual fine dining," a phrase that captures both the relaxed Emerald Coast setting and the serious culinary ambition behind it. The wine program is where Cuvee 30A truly distinguishes itself on the Gulf Coast: it holds Wine Spectator's Best of Award of Excellence continuously since 2016, making it the only restaurant in the South Walton region to carry that honor. Wine Spectator reserves this tier for lists that display "excellent breadth across multiple winegrowing regions and/or significant vertical depth of top producers" — typically 350 or more selections — and Cuvee 30A's list has met that standard year after year. In a nice touch, the restaurant hand-crafts a complimentary wine cork key ring from the bottle you open that evening, a small memento that is, literally, one of a kind.

The Menu and the Experience

The American cuisine at Cuvee 30A draws on Creehan's Louisiana roots and decades of Gulf Coast cooking. Signature dishes on the catering menu give a clear sense of the kitchen's range: pecan-crusted grouper with honey Worcestershire sauce, black pepper-crusted yellowfin tuna seared rare with soy ginger sauce, veal scallopini with morel mushroom sauce, New Zealand venison steak with sweet potato mash and a basil tomato red wine reduction, and rigatoni with lobster, crispy pancetta, and mushroom cacio e pepe sauce. The Happy Hour program — voted "Best of the Emerald Coast" by Emerald Coast Magazine — offers deep discounts on food, wine carafes, and craft cocktails in the bar each afternoon.

Beyond Dinner

The Chef's Table, Creehan's most intimate concept, seats one to five guests by reservation only and sets what the restaurant calls "the standard for fine dining on the Gulf Coast." Regular Wine Dinners pair five courses with nationally recognized vintners — recent events have featured grower-producer Champagnes from France alongside Caymus, Far Niente, and a roster of boutique California producers. Creehan has also authored three published cookbooks, and many of the recipes that appear on the Cuvee 30A menu can be found within them. For those planning events, the venue handles everything from weddings and rehearsal dinners to corporate gatherings across multiple spaces, serving the wider Emerald Coast from Destin to Panama City Beach.
