Jaleo at Disney Springs is the biggest and most spectacular location in Chef José Andrés' celebrated Spanish restaurant family — a dynamic, multi-level space set within Walt Disney World Resort's retail, dining, and entertainment district in Lake Buena Vista, Florida.

The Vision Behind the Table

Jaleo was born in downtown Washington, DC in 1993, when José Andrés — a pioneer of Spanish tapas in the United States — set out to bring the spirit and flavors of Spain to American diners. Named one of Time magazine's "100 Most Influential People" twice and recipient of the National Humanities Medal, Andrés built Jaleo around a simple but powerful idea: authentic Spanish cuisine, shared among friends, in a festive and welcoming atmosphere. The Disney Springs location carries that founding spirit forward at a grander scale.

Day-to-day culinary operations are led by Culinary Director Ramón Martínez, who trained at Spain's prestigious Escuela Joviat de Manresa and honed his craft at some of the country's most revered kitchens — including El Celler de Can Roca and Martín Berasategui's Basque Country restaurant. At Disney Springs, Head Chef Kristoffer Anderson and General Manager David Katz oversee the floor.

Spanish Cuisine, Shared with Intention

Plates at Jaleo are designed to be shared. The menu spans the rich regional diversity of Spanish cuisine — from silky 36-month cured paletilla ibérica from acorn-fed black-footed pigs, to pan con tomate on crispy toasted bread, to a carefully curated selection of Spanish cheeses sourced from Murcia, La Mancha, the Basque Country, and Asturias. A standout feature of the Disney Springs kitchen is its authentic paellas, cooked over a wood fire in the restaurant — a rarity that signals real commitment to the craft.

Tasting menus offer a structured way in: the "Jaleo Experience" moves through the most iconic tapas from Spain and the original DC location, while "¡Eat like José!" steps into more luxurious territory with the chef's personal favorites. The beverage program earned a Wine Spectator Award of Excellence in 2020, with an all-Spanish wine list complemented by house-made sangrias, gin and tonics, and Spanish draft beers.

Beyond the food, Jaleo at Disney Springs offers private event spaces, weekend brunch, and a sangria hour — making it equally suited to a leisurely lunch or a celebratory dinner.
