A Little House on Southard Street

Since 1995, Chef John Correa and his wife Judy have been running one of Key West's most quietly beloved dinner spots out of a small house on Southard Street — far from the Duval Street noise, and well worth the short detour. The restaurant's own tagline says it plainly: God Made the Fish. We Just Cook It Right.

That restraint is deliberate. Chef Correa trained in Europe, and his cooking reflects it — classical French technique applied to whatever the local fishermen bring in that day. The menu shifts with the catch, which means the food stays honest.

The Food

The signature dish is the Hogfish Snapper Solé: local hog snapper finished with a red pepper zabaglione, plated in the French tradition that has defined Correa's kitchen from the start. Thirty years on, guests still order it first. The Duck à l'Orange draws on the same European training — a dish that rewards repetition rather than novelty.

Beyond the fish, the kitchen turns out Rack of Lamb, Salmon Oscar, a Delmonico Ribeye, and desserts that regulars mention by name: the lobster bisque, the crème brûlée, the Key Lime Pie. The complimentary bread at the start of the meal has its own following.

The Caribbean and French influences come together in a menu that feels rooted rather than eclectic — two traditions that share a serious respect for good ingredients and proper sauce work.

The Room

A rose on every table. Pillows on the booths. Lower lighting. Guests consistently describe the atmosphere as romantic without being stiff — the kind of place where a knowledgeable server makes the evening, and the bread course is already memorable before the entrée arrives.

Wine Spectator recognized Café Solé with its Award of Excellence in 2023, a reflection of a wine list that takes the French side of the menu seriously.
