A Texas Institution, Thirty Years in the Making

Pappas Bros. Steakhouse on Westheimer Road opened in 1995 on the very site where the Pappas family had operated The Strawberry Patch, their first restaurant, since 1976. The family's roots in the business go back to 1967, and that heritage shapes everything about the place—the immeasurable care for guests, the attention to every detail, and the team that brings it all together. Three decades on, it remains what many consider the definitive classic Texas steakhouse.

The Meat, From Field to Flame

The kitchen's approach to beef is methodical and uncompromising. Pappas Bros. sources only USDA prime cuts from a single midwest packer, transports them directly to the restaurant, and butchers them on-site. Most cuts are then dry-aged in humidity-controlled freezers for a minimum of 28 days. Seasoned with kosher salt and black pepper, finished with butter, and seared to seal in flavor—the process is, as the restaurant puts it, "as fastidious as it is timeless." Every other item on the menu is made from scratch in-house daily, from the first course to the desserts.

A Wine Program in a Class of Its Own

The cellar is what sets Pappas Bros. apart even among fine American steakhouses. The wine list runs to thousands of distinct selections drawn from every serious wine-producing region in the world, and it is updated monthly to reflect evolving inventory. Long-standing relationships with producers—large and boutique alike—give guests access to hard-to-find bottles at a range of price points. That dedication earned the restaurant Wine Spectator's Grand Award, one of the most demanding recognitions in the wine world, and the program has held it continuously. In 2024, sommelier Steven McDonald was named the inaugural Texas MICHELIN Guide Sommelier Award winner—a distinction that speaks to the depth of expertise on the floor every evening.

Events That Go Beyond the Meal

The wine program extends well beyond the list. Pappas Bros. hosts regular tastings and seated dinners that bring winemakers directly to the table. A recent evening paired four courses with nine wines from Barolo estate Elio Grasso, guided by owner Gianluca Grasso himself—an illustration of the access and ambition the events calendar routinely delivers.

The Houston Galleria location has been recommended in the MICHELIN Guide Texas for consecutive years, and the restaurant appears regularly on national lists for both its steaks and its wine.
