The story
Bludorn opened in August 2020 on Taft Street in Houston's Montrose neighborhood, the product of a partnership between Chef Aaron Bludorn and his wife Victoria Pappas Bludorn. The restaurant serves New American cuisine with a distinctly French-inspired sensibility, anchored in Gulf Coast ingredients and driven by seasonally rotating menus, global wines, and handcrafted cocktails.
Aaron Bludorn's path to Houston ran through the Pacific Northwest, the Culinary Institute of America in Hyde Park, and ultimately the kitchens of Michelin-starred chefs Douglas Keene and Daniel Boulud. As Executive Chef of Café Boulud in Manhattan, he earned the Star Chefs Rising Star Community Chef Award and competed on Netflix's The Final Table alongside chefs from around the world. It was also at Café Boulud that he met Victoria, a Houston native who had trained at the International Culinary Center in New York and built her career in operations within Boulud's Dinex Group. The two married in 2018 and returned to her hometown to open Bludorn together.
Leading the kitchen today is Chef de Cuisine Alexandra Peña, a Houston native whose culinary roots trace to Mexican-American traditions passed down through her family. She rose through the ranks of the Bludorn hospitality group — from the vegetable station to sous chef, then executive sous chef at sister concept Navy Blue, and eventually Executive Chef at Bar Bludorn — before returning to the flagship as the group's first woman to lead its culinary program.
Completing the leadership team is Director of Operations Cherif Mbodji, who came from Restaurant Daniel (two Michelin stars) and Café Boulud, and brings the precision of New York fine dining together with the warmth of Southern hospitality.
The beverage program at Bludorn earned a Wine Spectator Best of Award of Excellence in 2025 — a distinction that reflects the depth and curation brought by Wine Director Evan White. White arrived with nearly a decade of experience, including a stint at Babbo Ristorante and roles within Daniel Boulud's Dinex Group, where he previously earned the same Wine Spectator accolade for the program he built at La Tête d'Or. He holds a WSET Diploma and Certified Sommelier credentials, and approaches the list with what he describes as a fun, thoughtful, guest-focused philosophy.
Bludorn holds Certified Green Restaurant status, a commitment that runs alongside the group's broader growth — which now includes Navy Blue, Bar Bludorn, and Perseid. The Montrose flagship remains the heart of it all: a neighborhood restaurant that serves New American cuisine with the kind of seriousness and warmth that comes from a team that has genuinely earned its place at the table.
