The story
In March 2021, Chef Paul Virant transformed his longtime Hinsdale restaurant into Vistro Prime — a neighborhood steakhouse rooted in downtown Hinsdale, Illinois. The pivot built on what guests already loved while sharpening the focus: steaks, chops, seafood, and the signature Vistro dishes that had become part of the restaurant's story, all served in a warm, casually elegant setting. The recognition followed quickly, with Hinsdale Magazine readers voting it Best Steak Restaurant, West Suburban Living naming it Best Steak Favorite, and the room earning a spot in Resy's Ultimate Guide to Chicago's Steakhouses. In 2024, Virant himself received the Jean Banchet "Chef of the Year" award from Eater Chicago — a reflection of the craft he brings to every plate.
Chef Virant's approach, as the restaurant describes it, is guided by "the highest quality ingredients and the craft he has honed throughout an extraordinary career." The dinner menu moves through traditional American steakhouse territory — steaks, chops, thoughtful seafood preparations — alongside the Vistro classics that have earned loyal regulars. Dessert receives the same careful attention, offering a considered finish rather than an afterthought. On weeknights, Happy Hour at the bar draws a crowd of its own.
Wine is taken seriously here, and Wine Spectator recognized it with its Award of Excellence for 2025 — a fitting acknowledgment of the work led by Wine Director and Certified Sommelier Grace Bradley. Her philosophy is built on contrast: Old World earthiness set against New World fruit-forwardness, delicate Burgundian Pinot Noirs alongside bold California Cabernets. As Bradley puts it, the list is designed so a guest can open with Muscadet and oysters, then move through a Bordeaux blend alongside a dry-aged ribeye. The Prime Wine Club extends that expertise beyond the dining room, with monthly selections from family-owned, small-production, organic, and biodynamic vineyards sourced through Grace's relationships with boutique distributors across Chicagoland.
