The story
Americana Kitchen & Bar has been a fixture of Central Jersey life for over 30 years — originally operating as Americana Diner before evolving into the full-service restaurant and bar it is today. That kind of longevity speaks to something real: a consistent commitment to the community on U.S. Highway 130 in East Windsor. The Wine Spectator Award of Excellence, earned in 2024, reflects how far the kitchen and the cellar have come.
The person most responsible for that evolution is Executive Chef Eric Thomas, a New Jersey native who returned home after nearly two decades shaping menus at respected New York institutions, including Nice Matin. His guiding principle is direct: thoughtfully handled, high-quality ingredients create dishes that nourish the soul.
That philosophy has personal roots. "I grew up in an Italian kitchen, cooking with my mother and grandmother," Thomas has said. "I was always eating, tasting, and getting fresh cuts straight off the knife." That upbringing, combined with experience across Italian, American, and French kitchens, informs the seasonal American menu he has built at AKB — one that draws on a farm-to-table approach and changes with what's best and freshest.
"I love being a chef," he says. "Being able to unite people through food — it's truly energizing."
The menu leans into seasonal American cooking with fusion influences — classic comfort alongside more inventive preparations. The bar program matches that ambition, with handcrafted cocktails, an extensive wine list recognized by Wine Spectator, and a curated selection of spirits and craft beers. Events like Bourbon, Scotch, Whiskey & Cigar nights give regulars another reason to return beyond the dinner table.
