Timeless Charm, Hill Country Spirit

At Signature, the building itself sets the tone before a single dish arrives. The tile-roofed dining room at Signia by Hilton La Cantera Resort & Spa is a testament to local craftsmanship: salvaged-oak tables, a zinc bar top, rugged forged chandeliers, hand-troweled plaster walls, and hand-pegged longleaf pine flooring reclaimed from San Antonio's historic Joske's building. A massive French limestone fireplace anchors the space, while a bohemian mix of American and European antiques layers 18th-century elegance over well-worn warmth. Outside, vine-covered pergolas frame a flourishing herb garden planted with native species, lavender, and rosemary — ingredients that find their way directly to the kitchen.

The recognition Signature has earned reflects the depth of that commitment. The restaurant holds a Michelin Guide Texas Recommended designation for 2024, earned a Wine Spectator Award of Excellence the same year, and was voted USA Today Reader's Choice 5th Best Hotel Restaurant in the country.

The Kitchen and the Menu

Executive Chef John Carpenter — a San Antonio local since age three, born on an American Air Force base in Germany — brings a French-brigade discipline to an open kitchen that guests can watch in action. Carpenter trained at St. Philip's College, earned his first head chef role at 24, and later joined The Culinary Institute of America before taking the helm at Signature. His approach, in his own words: "staying true to the spirit of Signature" while exploring what a French-brigade kitchen can achieve in a Texas context.

The menu reads as contemporary American-French — fresher, brighter interpretations of classics, enlivened by what he calls "unconventional Texas spirit." Gulf seafood shares the table with Atlantic Coast oysters flown in fresh. House-aged sirloin holds its own alongside Pacific Northwest lamb. The Hill Country contributes venison, dove, and quail. Local and organic sourcing means the menu shifts with the seasons, but quality, flavor, and artistry in the kitchen remain the constants.

Chef Carpenter's Tasting Menu, available Thursday through Saturday, offers a more structured exploration of the kitchen's range.

Signature Hour and Sunday Brunch

Weekday afternoons bring Signature Hour — Monday through Friday from 4:30 to 6:00 PM — when petite lobster rolls, grilled oysters, cocktails, and wines are served at the bar, in the foyer, or on the mezzanine. Sunday Brunch rounds out the week with a separate menu and its own cocktail list, making Signature as comfortable for a leisurely midday meal as it is for a formal dinner occasion.
